Fine Dining at the Hyatt with Chef Pfefferkorn

Not in the mood to leave the hotel? Then believe us, you’re in luck. At the Hyatt Regency Atlanta‘s Sway restaurant, acclaimed executive chef Martin Pfefferkorn has created a mouth-watering menu that combines southern comfort and locally-sourced ingredients (or as he puts it, “soil to city”).

For just a sample, check out how he prepares the fried chicken: each piece is hand-cut by an in-house butcher and placed in an apple cider brine, before being marinated in buttermilk for a rich, decadent flavor experience.

If you’re counting calories, don’t worry: there’s plenty of lighter fare on the menu that makes the best use of the local organic produce, wheat breads and cage-free eggs.

And hey, if you’re eating light, that just leaves room for the pie bar.
